2 Minutes Santa Hat Cupcake

Last week, I baked a chocolate cake, cut out cylinder shapes and made icing. Unfortunately, my icing was too runny and it ruined all my mini cupcakes! So I had no choice but to cheat as my guests were due to arrive. I bought the ready-made vanilla icing and a packet of cupcakes! So if you ever ruin your Christmas party snacks or need a quick Christmas recipe to impress your relatives and friends, look no further! This is very simple Santa Hat cupcake and won’t take you too long at all. You will need a piping star nozzle and piping bag for this.

Choux Cygnets

Last weekend, we went to Honda Colliers opening event at Birmingham as Brendan Lynch, Series 3 #GBBO finalist was there to teach baking! Of course, at the same time, we also looking for our next new car.

Brendan showed us how to make Choux Cygnets. I was so happy to be able to speak to him and at the same time, I was also able to practise making it too.

Almond & Fruit Tarts

Yesterday, I was looking at fruit tarts from the supermarket and was inspired to try to make some for myself. I have always wanted to bake bite-size fruit tarts but know that getting the pastry right would be quite challenging. So I bought ready-made short crust for this first attempt and a tin of fruit salad.

Ice Cream Banana Crumble

My husband’s friend had given him a bunch of home-grown rhubarb and I decided to bake him rhubarb crumble using this recipe. But I had made too much of the crumble part and decided to make ice cream crumble for myself. So I mixed in almond flakes, sunflower seeds and chocolate chips into the crumble. I then laid it flat on to the Pyrex cooking sheet and baked for 10 minutes.

Rhubarb Crumble

This recipe is for Red Tractor #RTChallenge. This is my third recipe to cook rhubarb crumble using the hamper full of delicious Red Tractor Assured ingredients they provided.  We used the British grown rhubarb from Waitrose and British butter from Morrisons.  My husband took this recipe from BBC Goodfood but modified it slightly.

Mung Bean Soup / Green Bean Soup

Green bean soup was never one of my favourite desserts until I came to UK as this is the only dessert I know how to cook.  Fairly simple!  Soak the mung beans / green beans for a couple of hours or overnight before placing them into the slow cooker, with a 2 to 1 water to bean ratio.  Cook it till soft and mushy.  After which, add rock sugar or brown sugar.  It is then ready to serve.

Valentine Day Jelly Heart

Valentines Day is approaching soon.  Instead of buying an expensive gift to Mr C, I decided to make him a jelly heart as a treat!  I bought the jelly mixture from a Chinese supermarket.  It is called agar agar and is slightly firmer than other jellies which is good with moulding and cutting.  I also bought a pack of heart shaped cookie cutters.

Winter Solstice Festival 2013 with Tangyuen

After reading Jenny Leonard 5 minutes cinnamon whirls blog post, she inspired me to make one too.  But I instead made up something even quicker!  This is a very lazy recipe and requires less ingredients.

My Ice Cream Challenge

I am always up for a new challenge or competition especially cooking or baking.  As many will know, I am from Singapore and since I was brought up in an Asian country, my preferred style of is mostly Asian food. For this challenge I tried three different ingredients! I am going to make some unique flavours that you won’t be able to find in the shop! I am making a Milo, a Ribena and a Rosé flavour ice cream!

I have received this ebuyer Swan Ice Cream and Gelato maker to do this challenge.  Note that the freezer bowl has to be kept in the freezer until you are ready to add your ingredients and always use a tea towel to hold it.
