It’s the most wonderful time of the year and this year, we were on HARIBO’s nice list to receive this delicious HARIBO hamper. There was also an extra special gift to give us this opportunity to create magical Christmas memories by making our very own gingerbread house.

Pandan Lollipop Cookies
Did you celebrate National Lollipop Day last week? It fell on the Thursday 20th July 2017 and to celebrate this day, I decided to make Pandan Lollipop Cookies. I love baking and I love the Pandan aroma. It always takes me back to my childhood. Also it is a unique flavour to Asia. You can get pandan chiffon cake, pandan flavoured rice, pandan glutinous ball and many more. Recently, I also baked lot of yummy pandan pretzels, do check out the recipe!
Anyway, I wanted to make use of the Pandan flavour to make lots of different kinds of recipes. Instead of using making sweet lollipops, for this National Day, I am baking Pandan lollipop cookies instead!
Butter Chocolate Chip Cookies
This Butter Chocolate Chip Cookies recipe only requires four ingredients to make. Its tastes very buttery and crumbly and will appeal to both children and adults! Butter Cookies are one of my favourite snacks of all times. It is also one of the easiest things to bake together with my children. Ms C loves chocolate chips hence we added them into this butter cookies recipe.

Did you know that recently the Singapore pandan cake has made headlines, after being named one of the world’s 17 best cakes by the travel website of US news outlet CNN? They have described the cake as essentially a chiffon cake infused with green-coloured juice from the pandanus palm.
Having this Collective Bias opportunity, I decided to make a Pandan Pretzel to celebrate World Pretzel Day which is today!
Kransekake, Traditional Norwegian cake
Kransekake is a very impressive traditional Norwegian cake that is made of rings stacked in a tower. It only requires three types of ingredients: ground almonds, egg whites and icing sugar. It looks easy to make but it requires plenty of time to do it. The dough needs to rest overnight before rolling out hence it took two days to complete. So if you are looking to make it, leave plenty of time including time for decoration for a lovely finish.
My Bake for 2016
Some of you may know that I love to bake and have tried many different recipes already this year. I have tried numerous cheesecake recipes from baked strawberry cheesecakes to Japanese cotton cheesecakes. I’ve failed numerous times with this last one. Each time, I waste at least six eggs and not to mention plenty of time and effort. Nevertheless, one out of ten bakes, I have made a good Japanese cotton cheesecake. It’s so light and fluffy!
Chinese Swiss Roll Recipe
The Swiss Roll is one of my all-time favourite cakes and I usually buy them from the Chinatown supermarket or bakery shop! The recipe that I love is where the sponge is always very light and thick which makes it so tasty. Since earlier this year, I have been trying different recipes, watching YouTube channels for inspiration and after a few attempts, I think I have found a great recipe that bakes a great sponge.
Date & Walnut Loaf with Honey Cream Cheese
After trial and error, I finally managed to bake a moist and soft Date & Walnut Loaf! This is a Mary Berry recipe but I have personalised it to suit me. Everyone who tried it, loved it especially with the honey cream cheese spread!
Sweet Piggy Bun
This Easter holiday, we have been busy baking and decorating lots of cakes and buns like Sweet Piggy Bun & Chick bun, thanks to Wilko who sent us a surprise bundle of baking goodies to make it happen! My children love to help me in the kitchen and with these extra tools we had a lot of fun!
We have received this gorgeous blue Mason Cash mixing bowl, Mason Cash measuring jug, revolving rolling pin, whisk, Oink Oink mixing spoon, Oink Oink spatula, mini scales, heart cookie cutter and 9” spring form cake tin.
Coffee and Walnut Cake
I asked my friend what to bake next and she gave me a few suggestions. I decided to bake coffee and walnut cake which I had not baked before. After a few searches on Google, I found Nigella’s recipe and I made it last week. It was very successful. It is a typical English style cake with thick icing. So I decided to modify the recipe slightly to make the cake nuttier!
Nutella Crunch
If you are a big Nutella fan, then you will love this recipe! This recipe only uses four ingredients which are butter, malt biscuits, Coco Pops and Nutella of course! These ingredients can be found in most kitchens, but if you could always substitute Coco Pops for Rice Krispies for example. When I offered to make this, both my children were super eager to help with this one!
Chocolate Dipped Almond Cookies
Almond cookies are one of my favourite cookies of all time. I love them especially during Chinese New Year time. I love it when they just melt in your mouth.
