Kids Teatime Takeover

This autumn, McCain want to champion the simple joys of teatime. They want to hijack every Thursday night of the week where mums and kids can connect over food by simply swapping roles and encouraging kids to take over the helm in the kitchen.

I totally love this idea, not only is it a great way to get kids to learn a basic life skill, it also gets them off the TV or iPad to spend some time with me in the kitchen. It is also the only time that we are able to spend time in the kitchen. Most of the days we are rushing to their extra-curricular activities and Thursday night is the only day that we get to come home straight from school.

Both Mr K and Ms C are at the age where they can give me a hand in the kitchen and for them to decide what to have for tea. Mr K is the head chef while Ms C is his runner.

For the next few weeks on Thursday night, to make my life easy, we are going to use McCain Oven Chips, McCain Curly Fries and McCain Baked Potatoes as part of our meal. These McCain products are a few of my favourite! Also not forgetting the Potato Wedges. Whenever I host a party, these always get served.

Christmas Yule Log

This is my first time making a Christmas Yule Log and I am very pleased with the outcome. The log is basically a chocolate roulade or Swiss roll. In this recipe, I have made it flourless. If you prefer it to be more dense, then add the same amount of flour/caster sugar in it.

Halloween Ghost Chicken Cupcake

After watching the last episode of Great British Bake Off 2015, I was quite sad that I won’t have any more fabulous bakes to look forward to each week to inspire and challenge myself. Nevertheless, Taste100 is challenging bloggers to create hen-inspired cakes to be judged by ex-Bake Off contestant, Chetna Makan!

As the more creative the bake is, the better chance of winning a Mason Cash Bakers Set, along with a Cath Kidston set of containers and apron. So thinking outside the box – since Halloween is coming, I decided to mix both hen and ghost spirits together. I bring to you this Halloween Ghost Chicken Cupcake!

Since I had tried to bake coffee cupcakes, I decided I needed to try to bake tea cupcakes next! I am a big fan of green tea. It is very light and fragrant. The best way to achieve a tasty green tea cake is to use the green tea powder rather than brew from the tea leaves. However, I did find it hard to get the green tea powder from our area, but I do know that they can be found easily in London or Chinatown.

Anyway, I have a box of green tea bags, so I decided to use them. I didn’t want to put the leaves into the cake as my children probably won’t like it hence the flavour and colour are not a very strong shade of green.

Chocolate Apples

Today is the beginning of National Chocolate Week, so what better time to treat yourself to some delicious chocolate or get your children involved in making Chocolate Apples?

This Chocolate Apples recipe is from Amy Beth-Ellice. In her recipe, she uses Granny Smith apples. I have chosen to use Royal Gala because my family are not keen on sour apples, so we just picked our favourites.

Peanut Butter Cheesecake

Over these last few months, I have been experimenting cheesecake bakes using different types of bases. From Oreos to digestive biscuits, to cheese crackers to chocolate biscuits. In this latest creation, I have used peanut cookie as the base. It requires blind baking for 15 minutes before adding the cheesecake. I didn’t want to detract from the flavour of the base hence I opted for plain cheesecake using soft cheese and mascarpone.

Brewers Fayre Autumn Menu 2015

Can you believe it is autumn and almost time to turn the clocks back? One of our favourite pubs have recently introduced an affordable freshly prepared Autumn Menu that is perfect for any autumnal day and not forgetting Beano inspired favourites for the kids menu too! The Autumn Menu consists of Daytime Value and Evening Value. Do check out your local opening hours and offers from the Brewers Fayre website.

Italian Tuscan Fish Soup

Want to learn how to cook authentic Italian gluten-free or Paleo diet? Then you should take a look at this Paleo Italian cookbook by Cindy Barbieri! Her book contains a great collection of her family recipes from appetizers to brunch, from Tuscan favourites to Seafood main courses and many more delicious recipes! I am totally spoilt for choice and I want to cook every recipe!

Cindy took 4 years to write this book and she has taken the dishes her Nana made for her family and transformed her recipes to fit a Paleo lifestyle. I’ve always thought that Italian staples are pasta, bread and pizza. So it is very interesting to know recipes for a Paleo diet!

Traditional Piglet Mooncake

Last year when I went back to Singapore to visit, I bought a few mooncake moulds and now it is the time of the year to make it! As I don’t have the main ingredients to make mooncake, I decided to make piglets instead. For my previous mooncake bakes, do check out my swiss roll snow skin mooncake and colourful snow skin mooncake.

Piglet or 豬仔餅 has always been my favourite snack to eat during the mooncake festival. But my mum always refused to buy them for me as they are not particularly healthy and they are made from leftover pastry for the mooncake. Now I can totally understand what she meant!

Coffee & Mascarpone Cupcakes

After the long summer break, this week I finally have a bit of time to start baking again! So I decided to bake coffee cupcakes and make use of some mascarpone that had been sitting in my fridge for weeks! This recipe is almost like a Victoria sponge cake recipe. This Coffee & Mascarpone Cupcakes recipe makes 12 cupcakes.

Organic Food Review

Did you know this September is Organic September? This year, they have replaced the National Organic Fortnight with Organic September. The whole month is dedicated to celebrating all things organic. They would like you to make a small change to your everyday shopping and help them make a big difference by swapping to organic food. Soil Association will be sharing a whole host of special offers and exclusive discounts from some of the biggest organic brands and they have also teamed up with some of the UK’s best chefs to inspire you with ideas of what you can make using your fresh, seasonal organic produce.

I have received a range of organic products to kick-start this project. I’ll be honest, up until now, I have not really used organic products unless I had no choice. But after reading that it will help animal welfare and the environment, it did change my viewpoint.

Pumpkin Whoopie Pie

I have been experimenting with baking using vegetables recently and so far it has been fun. Surprisingly, it has all gone down well with the children. Coincidentally, I am delighted to receive this Baking with Vegetables cookbook from Parragon. As the name suggests, there are some fabulous recipes with using vegetables in your bakes and it’s given me even more inspiration to be adventurous.

Thunder Chocolate Kisses ‘65

Recently, I came across the Bake in Black cookbook which was written by a musician and a food journalist in East London. They started started life as a blog from a kitchen and took a song or an album title which then inspired them to create a recipe. It draws influence from the world of rock and heavy metal to create awe-inspiring edible tributes in the kitchen. There are more than 60 sweet indulgences in this cookbook.
