Japanese Surprise Box Unwrapped
My son has been watching quite a lot of video on YouTube and one of the videos he saw was about unwrapping a food box and trying out the snacks in it. So he asked my sister who happened to be working in Japan at the time to make him a box.
I asked her to get us a small box of candies and I was so surprised to receive a huge box of Japanese goodies! Some of them are my favourites too! I have been to Japan three times for holidays and I am totally in love with the place and their cute ‘kawaii’ foods/snacks. They place emphasis on the emotive packaging and pay extra attention to detail. It makes the food so appealing!
Apam Balik / Min Chiang Kueh Recipe
Apam Balik, also called Min Chiang Kueh (面煎粿) is one of the local snacks from my childhood that I used to eat for breakfast or dessert. Nowadays, it is a very common kueh/snack you can find at shopping malls or at hawker centres. They can come in many different fillings like ground peanut, red bean paste, cheese, salted green bean paste, chocolate, black sesame seed and many more. It is more common/traditional to have ground peanuts as the filling. If you have a nut allergy, you might want to avoid some of the Asian desserts!
My preferred filling for Min Chiang Kueh is ground peanut. I had already bought a few packets of ready-made ground peanut with sugar while in Singapore last year so now was an opportunity to use it.

We are a huge fan of chocolate and I frequently bake chocolate cakes or cookies to share. Chocolate always tastes better if it’s shared with your loved ones and friends. I tried baking traditional chocolate profiteroles recently, but this time around, I decided to make a creative linked heart effect pattern on the Choux buns. Peanut Cookies
Peanut cookies are one of my favourite snacks to eat during Chinese New Year. Normally we will buy them from shops in Singapore but now living in the UK, it is impossible unless I buy them from Chinatown. So I decided to make it myself using the recipe book given to me by my aunty.
The first obstacle I found to making this recipe was trying to buy roasted peanuts without added salt. In the end I bought raw peanuts and made everything from scratch. You can usually find packets of raw peanuts in the health food aisle of a supermarket. To make roasted peanuts, I chopped the raw peanuts in a blender and roasted them in the oven at 160°C for 15 minutes. I stirred the peanuts every 5 minutes of baking.
2 Minutes Santa Hat Cupcake
Last week, I baked a chocolate cake, cut out cylinder shapes and made icing. Unfortunately, my icing was too runny and it ruined all my mini cupcakes! So I had no choice but to cheat as my guests were due to arrive. I bought the ready-made vanilla icing and a packet of cupcakes! So if you ever ruin your Christmas party snacks or need a quick Christmas recipe to impress your relatives and friends, look no further! This is very simple Santa Hat cupcake and won’t take you too long at all.
You will need a piping star nozzle and piping bag for this.

Last weekend, we went to Honda Colliers opening event at Birmingham as Brendan Lynch, Series 3 #GBBO finalist was there to teach baking! Of course, at the same time, we also looking for our next new car.
Brendan showed us how to make Choux Cygnets. I was so happy to be able to speak to him and at the same time, I was also able to practise making it too.

The cookbook is also very informative. It explains how both refined and natural sugar affects the body, how it has snuck into our food, the health benefits of eating more quality protein, wholefoods and good fats and much more.
It has certainly enlightened me. I was always very curious about the alternatives for sugar for diabetics. Both my parents suffered from diabetes which I will likely inherit in future. So I should watch my intake of sugar especially as I love sugary food!
The book will be released on 3rd November 2014 and is published by Parragon Books Ltd. The book is paperback containing about 128 pages. It comes with six chapters: introduction, breakfasts, lunch & snacks, mains, desserts & baking and index. It is easy to navigate through the book for recipe ideas. Each recipe comes with clear instructions, beautiful photos and nutritional information per serving (calories, fat, saturated fat, carbohydrate, sugars, salt, fibre and protein).
