We have never been a big fan of brownies because they tend to be too dense for our taste buds but I decided to experiment with it as I am trying different types of bakes each week. My son and I tried out this recipe together. It is from The Secret of Cookies which I bought it from Singapore. I have changed some of the ingredients for ingredients more widely available in the UK.

No Bake Chocolate Cheesecake
Last weekend, I invited a few friends over for a drink and a catch up but unfortunately I was ill. They all turned up but I didn’t get chance to take many photos. I made this super easy cheesecake that does not require baking. All you need to do is mix!
I have used Oreo biscuits for the base and it can get quite sweet. If you prefer less sweet, replace it with digestive biscuits instead. To make the base, I always use these measurements in these proportions: 100g of biscuits mixed with 50g of melted butter. This is what I used for my no bake Chocolate Cheesecake.
Minions Sweet Corn Steamed Cakes
As many of you may know, the brand new Minions movie hits cinemas on 26th June 2015! We can’t wait to watch it now! To celebrate, Green Giant is challenging bloggers to create the ultimate Minion-inspired summer snack.
So I created these Minions sweet corn steamed cakes! I can understand that it might sound weird for some people but in fact, in Asian countries, sweet corn is used in many recipes. We even have sweet corn ice cream, sweet corn jelly and not forgetting the popular chicken with sweet corn soup as found in many Chinese takeaways and restaurants.
Most children love cake! But not all children love vegetables! By combining these two together, we made sweet corn cakes! Sweet corn is naturally sweet, healthy and nutritious!
Multi Faith School Trip Derby
Recently, I was invited by my children’s school to make a short video clip on their Multi Faith school trip. We are hoping to use the brief introduction video to show parents what the trip is about and to educate children who will be going in the near future.
Before we headed off, we had to make sure that all the children’s clothing was appropriate and the girls had a scarf and the boys had a hat/cap. If girls were wearing dresses with socks, they were asked to wear trousers with it. It is important to observe the dress code when you are visiting a temple. We had quite a few children who didn’t wear the appropriate clothing so hopefully this video will help others in future!
After the helpers were assigned to their group of children, we all hopped on the coach and promptly set off. The first place we went to was the Guru Arjan Dev Gurdwara (Sikh) in Derby. Our coach was parked outside the temple’s bus stop. Before we entered the temple, the children were lined up into groups of girls and boys. The group of girl were ushered to the left hand side of the temple while the groups of boys went to the right. Everyone had to cover their heads with a scarf or hat, remove their shoes and wash their hands before entering the prayer room.

Kai Yang Thai Grilled Chicken
My husband and I enjoy eating Thai food but I have yet to learn how to cook it from scratch. Normally, I use ready-made packet sauces. Thai food is famous for its balance of sweet, sour, salty and hot flavours. One of my favourite dishes is Tom Yum soup. It is a clear soup base and very spicy! I love the hit of the spiciness.
Nong’s Thai Kitchen cookbook has 84 classic recipes that are quick, healthy and delicious! It will be available on the 9th June 2015 from Tuttle Publishing. Do look out for the book. It will be available from Amazon too. What I like this cookbook is that the author has explained in detail the various Thai ingredients. I didn’t know that coconut comes in cream and milk and they are totally different ingredients. I always thought they were both the same! In this book, there are recipes from appetizers to soup, noodles to desserts. The Grilled Chicken recipe caught my eye!
According to the author, there are many versions of Thai grilled chicken and this recipe uses coconut milk! Yes, coconut milk to marinate. It sound very intriguing! Here is the recipe.
Princess Castle Cake
Last week, my little girl turned six and you wouldn’t believe that if you saw her in real life. She is as little as a three or four year old. Anyway, I asked her what type of cake she wanted and she requested a Princess Castle cake for her big day. So on her birthday eve, after putting them to bed, I started whisking and baking. It took me nearly 3 hours just to bake alone. I didn’t have enough baking equipment resulting in having to wait until I’d finished with some items so it could be washed and dried before reusing for the next task.
So I made two tiers of Madeira cake and a sponge cake for the top. The reason for the different cake was because I ran out of baking ingredients too! Then I iced it with strawberry flavour icing. For the castle, I dipped the ice cream cones into candy sauce and sprinkled lot of sprinkles onto it. Once dried, I sliced a few into half for the sides of the castle.
Then I made a flag from a cocktail stick and paper. Once everything was in place, I mixed two different icing for piping. The green is for the plant and red icing for the flower.
This is my first time making such a big cake. Hopefully by next year, I am able to polish up on my piping and decorating skills and make a better looking cake! For now, this is it! A total of six hours of baking is definitely worth it when you saw the look on her face. She was very delighted!

JCB Big Dig Zone opens at National Forest Adventure Farm
This coming half term, National Forest Adventure Farm is packed full of activities with Get Wild and Deadly. They have also opened the brand new JCB Big Dig Zone to celebrate the forthcoming JCB Maize Maze open between 11th July to 6th September 2015.
Get Wild and Deadly (open only from 23rd – 31st May) is a show that runs daily at 11am, 1pm and 3pm in their Barn Theatre. It is best to get in early to grab a seat to get a better view. They show a series of some of the planet’s craziest creatures from Burmese pythons to giant bird eating spiders plus lizards, stick insects and chameleons.

Recently, I came across MeinCupcake’s website and was very pleased with their online shopping experience. They have a huge range from baking equipment, baking ingredients to cake making supplies.
I am a very keen baker and like to bake at least once a week. I always find it hard to get all the items from one shop but Cakemart has it all. I love the brands that they stock like Dr. Oetker, Renshaw, Wilton, Kitchen Craft and many more. The website is easy to navigate with clear titles and categories. For each product, it will show you how many items are available online. One quirk I discovered though – some pages have not been translated from German to English as they are a German company with international web pages.
