Butternut Squash Muffin

Did you know that Jamie Oliver has teamed up with Moshi Monsters favourite character Furi to inspire young budding chefs around the world to get into the kitchen and learn how to cook? The duo have been cooking up a storm in Jamie’s kitchen to create a delicious Butternut Squash Muffin.

Furi is just one of the latest guest stars on Jamie’s Food Tube channel, with the chef regularly welcoming fellow YouTubers and chefs to join him in the kitchen. With expert tutorials, easy to follow recipes and good food, Jamie and Furi are aiming to excite a new generation of chefs to get creative.

This is my first time using vegetable in a muffin and I was quite worried that it would taste bland but to my surprise, we all love it! This recipe is so easy to make and very delicious too! It tastes like a proper delicious cake and I love that it has the hidden vegetable inside too.

This bake requires a food processor to mash up the butternut squash. I don’t have a food processor so I ended up using my Breville Blend Active to mash up the butternut squash, olive oil, egg and walnut mixture in it. It works like a charm!

We have received this lovely hamper to help us to bake these yummy Butternut Squash Muffins. This will bake at least 12 muffins.

Ingredients:

  • 200g butternut squash (skin on)
  • 175g soft brown sugar
  • ½ teaspoon ground cinnamon
  • 150g plain flour
  • 1 heaped tablespoon baking powder
  • 2 eggs
  • 35g walnuts
  • 5 tablespoons olive oil
  • 75g sour cream
  • 1 tbsp icing sugar
  • 1 vanilla pod
  • Zest of 1 lemon
  • (optional a few seasonal berries)

This exciting new video Jamie has been transformed into Jammie Olive Oil, a ‘fang-tastic’ Moshling character, with the chef’s signature quiff and plaid shirt. Jamie will demonstrate how to bake this delicious and healthy muffin!

We also received these cute Moshi Monsters Candy Floss Spinner along with other characters! Ms C was so pleased with it and keeps spinning the Moshi Monsters inside the candy floss maker! So anyone want Candy Floss? We do!

    would love to sneak some vegetables into baking, to make cakes a bit healthier, would never have though of trying butternut squash, your muffins look yummy!

    These look great. I’ve only ever used beetroot in a cake (works really well in a chocolate cake, helps to keep it moist). I’ve seen lots of recipes using butternut but haven’t attempted it myself. Might have to have a go at making these though – thanks for sharing!
