Salad with couscous

This salad recipe is for Red Tractor #RTChallenge. This is my fifth recipe using Red Tractor Assured ingredients they provided. Please click here to learn more about Red Tractor and their food assurance scheme. Do look out for the Red Tractor logo on a huge range of products. The logo will appear in a variety of positions. It could be on the front, back or side of the pack.

This time I am using up all the salad and vegetables from the hamper that are left in my fridge!

Salad with couscous

Ingredients:

  • Beetroot
  • Radish
  • Carrot
  • Pepper
  • Rapeseed oil
  • Lemon juice
  • Couscous
  • Vegetable stock
  • Croutons
  • Salt and pepper to taste

Method:

  1. Put couscous into a large bowl, pour over the vegetable stock, cover it then set aside for 10 minutes. Fluff up with a fork and fill it into the pepper.
  2. Mix the chopped beetroot, radish, carrot and croutons into a large bowl. Add rapeseed oil and lemon juice.
