Oriental Mango Dressing

Recently, OXO Good Grips had set me a new challenge to make a salad dressing using their herb mincer and little salad shaker along with a bottle each of Filippo Berio Extra Virgin Olive Oil and Balsamic Vinegar.

Since I am from Singapore, I wanted to bring in an oriental blend into Italian food. Mango is one of my favourite fruits. My granddad used to have four mango trees and two rambutan trees in his garden. We always go to his house to pick fresh mangos. Nowadays in supermarkets, it is quite hard to get fresh mangos as they more often than not sell them them pre-sliced in packets.  This is my Oriental Mango Dressing recipe.

Ingredients:

  • 1 ripe Mango/4 – 5 slice of mango chunks
  • 1 tablespoon dill
  • 2 tablespoons lime juice
  • 2 tablespoons fish sauce/soya sauce (for vegetarian)
  • 5 tablespoons olive oil

Methods:

  1. Blend the mango into a puree.
  2. Use the herb mincer to cut the fresh dill.

  3. Pour it into the salad shaker along with dill, lime juice, fish sauce/soya sauce and olive oil. Shake well and serve with salad.

The dressing is slightly thick so if you prefer it to be more runny, add more olive oil. The dressing is very sweet and tangy. It is great for any type of salad.

OXO Good Grips Herb Mincer

This gorgeous looking herb mincer with its ergonomic handle allows for a smooth rocking action, mincing herbs with ease in all directions without bringing the blade away from your chopping board. It cuts very well on the herb. I would suggest to cut it on a wooden chopping board rather than plastic chopping board. The blades are very sharp that I could see it slice into the chopping board and the herb stains in between those grooves.

It is designed to be able to opened partially to wipe the blades free of collected herbs when in use, the mincer also separates completely into two pieces for easy cleaning and is dishwasher safe. It is a very nice gadget but there are no hooks to hang it. So it has to stay in my drawer. It is available to buy from John Lewis at £12.

OXO Good Grips Little Salad Shaker

This is a 236ml salad shaker that will serve two persons and it comes with leak proof seal. The top easily unscrews to reveal a wide opening to accommodate a range of ingredients. Just use the one handed open and close top lever when you are ready to serve.

It is made from Tritan, dishwasher safe and BPA-free. It is available to buy from Lakeland at £10.

Filippo Berio Balsamic Vinegar

It’s from Modena and is smooth and flavoursome, with the classic, light sweetness for which Balsamic Vinegars produced in Modena are world renowned. It comes in a 250ml bottle with RRP £3.00 which is available to buy in Tesco & Ocado.

I am not a big fan of any type of vinegar as it always tastes too strong for me. But Mr C loved it for dipping his bread and drizzling on his salad.
