Oreo Biscuit Cupcake

After watching the Great British Bake Off last week, I really wanted to bake biscuits so badly! Due to the summer holiday and busy weekend, I decided to make this super easy Oreo biscuit cupcake! This requires only three basic ingredients and Oreos, of course. If you don’t have Oreos, you could also use crackers.

Ingredients:

  • 200g Oreos (crushed)
  • 120g Butter
  • 4 Eggs
  • 150g Caster sugar

Method:

  1. Beat the butter and sugar until fluffy and light.
  2. Add the eggs slowly and mix well.
  3. Add the Oreos in.
  4. Bake for 170°C for 25-30 minutes.

The cupcake went down well with both of my children while my husband said it looked like solidified molten lava! The cupcake is neither too soft nor hard. They taste great but admittedly, they don’t look the most attractive. Anyway, I have kept them in this beautiful personalised cake tin from I Just Love It. This is an 11cm by 24cm grey enamel cake tin with a stainless steel loop handle. You can personalise it with any message up to 20 characters long and it will be hand-painted! This has to be hand washed as abrasive cleaners and dishwasher use is not advised. This is a great cake tin to store any bake!
