This Butter Chocolate Chip Cookies recipe only requires four ingredients to make. Its tastes very buttery and crumbly and will appeal to both children and adults! Butter Cookies are one of my favourite snacks of all times. It is also one of the easiest things to bake together with my children. Ms C loves chocolate chips hence we added them into this butter cookies recipe.
I have used salted butter as opposed to unsalted butter to enhance the cookies’ flavour. Of course, if you prefer to have lower salt intake, do used unsalted butter instead. It won’t make a big difference. Also if you don’t have self-raising flour, you can add plain flour with baking powder instead.
Ingredients:
- 300g self-raising flour
- 250g salted butter
- 125g caster sugar
- 50g chocolate chips
Method:
- Place the butter into the mixture and beat it for 30 seconds (I use my Savisto Mixer). Then add caster sugar in and mix well.
- Fold in the flour until it is well mixed.
- Transfer the dough onto a silicon mat. If it is too sticky, add more flour to cover the dough.
- Mix in the chocolate chips. Wrap the dough with a plastic bag and leave it in the fridge for at least 5-10 minutes.
- Take the dough out and roll into a small ball (about 50g). Place it on a baking tray. Ensure you space the cookie balls apart to give them room to expand during baking.
- Flatten the cookie balls with a fork.
- Bake for 12 – 15 minutes at 160°C. This recipe can bake at least 32 yummy cookies. I did have to swap my baking trays half way into the timer as my oven tends to over bake at the far end.
- Take out the baking tray and leave the cookies out to cool down on its tray. The middle of the cookies might still be soft but don’t worry as they will slowly dry itself out. Once the cookies have cooled down, transfer them onto the rack and continue to let it cool down. If your cookies are baked well, it should slide off the tray very easily. Now place your cookies into an air tight container and enjoy.
My family and friends all enjoy eating these Butter Chocolate Chip Cookies. They are light and buttery. They can last for at least 3 days in theory but they never do in our house!
