Baharat Roasted Chicken

Baharat is a spice blend from the Middle East. Recently, I have received the spices from Seasoned Pioneers to try out. I used a small quantity of the Baharat spice blend to rub into a whole chicken for roasting. It is such a rounded earthy spiced flavour with peppery notes. It is a great in tomato-based sauces and soups as well as meat and vegetable stews. You can also use it in a dip with mayonnaise.

After rubbing the spices onto the skin of the chicken, I placed a knob of butter on top of the chicken breast and placed it in the oven for 1 hour 10 minutes at 170°C (adjust time according to the size of the chicken). Within minutes of baking in the oven, the aroma spread throughout the whole house.

If anyone asked me to recommend kitchen accessory gadgets, I think OXO Good Grips covers it all! I am so in love with this poultry lifter. You might think that it is just to lift the poultry and it is not a big deal. For me, I love that it’s a little thing that just helps make life easier. Now I can just use the lifter and transfer it to the plate quickly. Normally I’m using a fork and knife stabbing into the chicken and transfer it over, trying not to drop it and keep it in one whole piece.

This poultry lifter is shaped to lift from underneath the breast bone and the poultry remains presentation ready. It come with a non-slip handle with unique hook shape to provide leverage. It is made from stainless steel and is dishwasher safe. When stored, just be careful of the prongs. It can lift up to 11 kg of poultry. I think my next task is to bake a turkey! Mmmm… it has to be a small bird as my oven is quite small.

Then I served the chicken with tortilla wraps and lettuce. It was gorgeous! The taste of the spices has sweet hints of coriander and paprika. For me it is a mild spice that my children can enjoy.
