Baseball Cakelet

Baseball cakelet is a recipe I found on Cupcake Envy by Amy Eilert published by Tuttle Publishing. She is a self-taught cake designer whose love of baking and working with her hands found a perfect outlet in cake making. She founded Cupcake Envy in Wake Forest, North Carolina in 2006. In this book, it showcases a range of her cleverly single-serving cakelets that resemble a stylish party dress, a desktop humidor, a cheery coffee cup, an adorable baby bottle, a wicked voodoo doll, a stylish purse and even a baseball!

One thing I would like to point out is that in her book, she suggests to use corn starch to keep the fondant from sticking to the mat when you roll it out, and it will keep cutters from sticking too. Corn starch is not something I normally use for sugar craft as I commonly use icing sugar. Anyway, if I ever don’t have icing sugar to hand I will use corn starch instead!

For the cake base, Amy recommends vanilla cake which is a moist, tender cake. To make the cake, you will need:

  • 115g unsalted butter, at room temperature
  • 200g granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla bean paste/extract
  • 215g plain flour
  • 8ml baking powder
  • 125ml whole milk, at room temperature

Method:

  1. Whisk the butter and sugar until it is pale and fluffy.
  2. Add the beaten eggs one at a time into the mixture and add the vanilla paste/extract.
  3. Sieve the flour and baking powder into a bowl.
  4. Add the dry ingredients into the mixture and alternate with the milk.
  5. Bake for 15 minutes at 180°C or until it cooked.

To make this baseball cakelet, you need to make red royal icing and put it in a piping bag.

In the book, she suggests to use vanilla frosting which uses vegetable shortening. As I didn’t have that ingredient, I chose to cover my cake with buttercream.

I have bought a ready-made fondant, so after rolling it flat, I covered the cakelet with fondant. Place the cakelet in the refrigerator to chill for 30 minutes before decorating it with icing.

Voilà! This is the cakelet! This would definitely go well with any baseball celebration!

Amy’s instructions are easy to follow and there are so many beautiful cakelets to learn to make! Her book can be found on Amazon.
