As a convenience food, eggs are often underrated. They are packed with protein and a range of 18 vitamins and minerals. They are one of the core ingredients in our house so we always have a stock of them.
Today I am cooking my native Singaporean Laksa dish for two. Laksa is a popular spicy noodle soup. I love cooking Laksa as it is one of my favourite foods.
5 Tablespoons Laksa Paste
200 ml Coconut milk
Noodle for two
A branch of Pak Choi
For the egg strips:
2 Slices of Ham (chopped into small pieces)
Garlic and Salt to taste
To cook the egg strips
1. Beat the eggs and add garlic & salt to taste.
2. Heat up the non-stick frying pan with oil to cook the eggs. Pour in the egg mixtures and sprinkle ham on it. Cut into strips when it has cooled down.
3. Heat the pot and add the Laksa paste with 700ml of water. When the water is boiled, add the coconut milk, prawns and noodle. Cover the lid.
4. When the noodle is almost cooked, put in the pak choi.
